Pecorino belongs to the family of hard cheeses and is prepared from sheep’s milk, using an Italian recipe inherited by the cheese makers of Paramythia. It has a savory flavor with the distinct aftertaste of sheep’s milk. Its ages for more than 3 months and after its maturation it is packaged in airtight plastic bags where it is preserved. It is customarily consumed after lunch combined with wine and served either with fruit or walnuts, or honey.
