Having a very intense flavor and strong aroma, the Paramythia goat’s cheese is considered a fine delicacy by cheese lovers. It is produced from goat’s milk from the Souli area, between March and June, when the milk is rich in aromas and has a more delicate flavor, since the good weather allows the animals to graze free in nature and feed mostly on fresh greenery. Goat’s cheese is one of the most popular dairy products, not just for its unique flavor, but also for its nutritional value. It is more easily digestible, thanks to the goat’s milk, as it contains smaller fat globules and has a different composition of fatty acids, compared to cow’s milk. It contains less fat and is rich in calcium and magnesium. Goat’s cheese can be enjoyed by itself, accompanied with bread or in a grilled sandwich with the addition of tomato and oregano, while it is also an ideal accompaniment for salads.
