Soft creamy cheese made from sheep’s, and goat’s milk strained in cotton bags, by expelling the whey and retaining the nutrients of yoghurt. Pleasant aromas of fermented milk, combined with a cool, mildly sour, persistently and discreetly savory flavor. It is served with olive oil and enjoyed with toasted sour dough bread.
